A few weeks ago, we had the privilege of helping the beekeeper from whom we currently source our honey to move some of his hives to fields of marigold flowers. During the following weeks, we waited with anticipation for when we could taste this unique honey, as we have never heard of marigold honey before, and neither has our experienced beekeeper.
When we got a call last week Friday from the beekeeper saying that he had sourced a small amount of the honey, we eagerly rushed over to try it out.

Marigold honey, characterized by its delicate flavor profile, offers a nuanced taste experience. Its initial notes are subtly sweet, reminiscent of its floral origins, yet it possesses a distinctive complexity with a hint of bitterness that emerges pleasantly on the palate. This bitterness, akin to a gentle undertone, contributes to the honey's overall depth, providing a balanced and sophisticated flavor profile that discerning palates can appreciate.
We cannot wait for the honey to be bottled and delivered to our customers! This is certainly one of the most special honeys we have worked with.
